About - Scanpan Classic

The Scanpan Classic is part of the kitchen cookware test program at Consumer Reports. In our lab tests, cookware models like the Classic are rated on multiple criteria, such as those listed below.

Set (pieces):
Each set includes at least a saucepan, a frying pan, and a stockpot. Lids are typically counted as separate components in a set.

Cooking evenness:
Cooking evenness reflects the ability of frying pans to turn out evenly browned pancakes on a gas range.

Nonstick durability:
To assess nonstick durability, we intentionally abraded frying-pan surfaces with steel wool until the coating was worn through or up to 2,000 strokes. Scoring for finishes that were still intact at 2,000 strokes reflects reduced nonstick performance.

Comment:
I bought my first pan 5 years ago and use my pans everyday. They have mostly replaced my iron pans. I use metal utensils. I hand wash because I don't have a dishwasher. They are so easy to clean--heat the pan with a little water in it and it will release anything that has sticked. They are great for camping. I like the handles. They don't get hot on a stove top, but they do in an oven.
You aren't supposed to cook at very high temperatures. That will cause the coating to deteriorate. Although the pans I misused still work pretty well.
Heat the pan before putting anything in it. One of the only things I've found that stick are scrambled eggs or omelets. Butter works best because oil can't stick to the pan! Use the heat & water method to clean and the egg slips right off.

Comment:
Finish deteriorates - Scanpan does not honor warranty. In addition, one of the glass lids shattered in the oven at 325 degrees. Positively no excuse for that to happen. Serious danger. I will always consider this one of CR's biggest mistake in recommending this cookware. Do not buy.

Comment:
We have owned a 10 inch Scanpan frypan for over 10 years. It STILL performs like it did when we first obtained it. You cannot go wrong with Scanpan. It has changed color, gotten darker over the years, but that is all. Nevertheless, I called Scanpan today and told them it was working great but looked a little ratty and they are replacing it for free!! THAT is what I call service.
