I bought this set for standard kitchen needs, mostly vegetables, cleaning chicken, and slicing bread. The knives were very sharp right out of the box. However I noticed they used a very fine edge. Within a week I started seeing the edge actually rolled over. This material is way to soft, as though they forgot to harden the steel. Now all of the edges are rolled over. We are religious about only cutting on cutting boards.

I use my knives several times per day, primarily the chef's knife. They are mainly used to chop vegetables and slice meat on synthetic cutting boards. I only hand wash the knives in order to protect the edges, but this only takes a few seconds after I'm done using one and back in the block it goes. This was the first quality set of knives I bought and they were well worth it. It is amazing how much easier it is to prepare meals at home with a decent set of sharp knives.<br /><br />I sharpen the knives about every six months and use the steel included in the set to restore edges--about once per week on the chef's knife. With proper care they will hold a razor sharp edge.<br /><br />If you are used to more expensive, forged blades, these will feel light and cheap but otherwise, they are perfect for someone who cooks a lot and does not want to spend the higher cost of other high quality knives.

decent knives

Strength
The knives work well (sharp, good shape, etc) and the price is right!
Weakness
the handles are not shaped so as to have a clear barrier between handle and blade (there's a name for that - i forget), making it easier to slip and cut your hand on occasion.
I bought these knives without seeing them because they were rated high by consumer reports. so far, i have been pleased with them. the handles are conmfortable to hold though i do wish they had a barrier between handle and blade (i cut myself mildly once b/c they didn't). they definitely beat the flimsy knives i was using before, and the cost makes the downsides bearable.
