All of the comments from the other reviews share my thoughts. These are absolutely great knives and I use them regularly for the past 3 years. I bought the utility knife as a supplement to my Global knife collection and was amazed. I now have 6 shun classic knives and the steak knife set. The steak knives honestly cut steak like butter. Some advice though, always cut on a cutting board, find an online video on how to correctly hold a knife, and how to cut/slice/chop. Keep these knives away from small children and young adults and never demonstrate their sharpness by shaving your forearm.

There can be NO tearing.These trim meat effortlessly.I spent over $700.00 for my set, which I put together for my needs.They have a lifetime warranty. This includes repairs and sharping. This knife is a precision tool and we are eating better and healthier foods because cutting, chopping, scoring and all the other details of preparation are a pleasure and not a chore. The knife has perfect balance and the blade is extremely thin yet very strong. I own Henkels top series, and several other top brands. With all these knives (more than 15), I always choose the Shun. That is the real test, having all this choice and yet my favorite is the Shun. The others are like cleavers in comparison, clumbsy and thick. This is one time you get exactly what you pay for and the Shun is worth every penny. Slicing through very fresh bread (egg salad sandwich) is a breeze as the knife just floats through and does not squish either the bread or the very liquid egg salad. The Henkels leaves egg salad and flattened bread. I have now bought my second Shun and will add to my collection one at a time, as I see a need. My latest is a slicer, bought because of the added length. We often serve dinner to 30 to 40 people and I buy large hips of beef. The added length of the slicer lets me cut very thin and precise slices the entire width of the roast.
