    Whether you fancy yourself a baker or swear by store-bought delicacies, certain times of the year might make you want a home-baked pie. But if you want your recipes to come out right, you need the right tools. Yes, the pan is important if you want to make pies as good as Patti’s (if you know, you know).

    To find the best pie pans, I baked simple blueberry pies with the same store-bought ingredients, assessed how even the crust turned out, whether the pie stuck to the pan, how easy it was to clean each pan, and whether it had features or details that made it easy to use. I also took into account whether the pans were BPA-, PTFE-, and PFAS-free, according to their manufacturers.

    I tested seven pie pans, including a $15 Pyrex glass pan and pricier Staub and Le Creuset enameled dishes that could be passed down for generations. All of the pans turned out lovely pies, but a handful rose to the top for browning, ease of cleaning, and lack of toxic ingredients in the coatings. And in case you’re wondering, yes, I gave away the blueberry pies!
