Induction is the fastest cooktop heating we've tested—typically 25 percent faster than an electric smoothtop. Better yet, the price of many induction cooktops and ranges has come down, as manufacturers woo consumers with a speedy technology that's been slow to catch on in the U.S.
That's surprising given how rushed many Americans are and how well induction models have performed in our tests of cooking appliances. The cooktops we tested were excellent overall. The top-rated $1,700 Kenmore 43820 cooktop scored an impressive 99, delivering super fast heat and superb simmering. Most of the ranges were also excellent, outperforming all other electric and gas models. Induction ranges from GE Profile, Kenmore and Samsung made our list of recommended models and range in price from $1,800 to $2,500.

Don't forget that induction models use an electromagnetic field to heat mostly the pot or pan so magnetic cookware is needed.
