    I cook many foods consistently well, but bread isn’t one of them. Baking is so science-based that everything has to come together precisely: the ingredients, the measurements, and of course, the bakeware. If your family is anything like mine, the wrong bakeware will make you the forever joke at the family gatherings—not exactly the type of roasting you were trying to accomplish. So the start of bread season meant time for me to level up my tools.

    Against my abdominals’ best interest, I baked the same honey cornbread seven times, in seven different loaf pans, looking at ease of use, how well each loaf of bread browned, and whether the pan released the bread easily or if it stuck. Considering how often I host, I also noted how attractive the pans are and whether they’d look good on my dining table for a get-together or during the holidays, and how easy (or not) it was to clean each pan after use. 

    Some surprised and impressed me, and a couple didn’t quite perform on the level of their counterparts. I also checked whether any of the manufacturers made claims that their bakeware is free of chemicals, such as polytetrafluoroethylene (PTFE), per- and polyfluoralkyl substances (PFAS), and bisphenol A (BPA). In the end, four loaf pans came out on top—so much so that I may be inspired to throw a carb party. Sorry, abs.
